Golden Pancakes

Cooking Breakfast for the Family

The weekends are a fun time for everyone.  Friends and family get to be off from work and school and get to relax for a little while. One of my favorite recipes to make is pancakes.  It is also one of my kids’ favorites.  Jacob would eat pancakes every morning if he could.

Sometimes I make up my batter the night before & refrigerate it, so there’s not so much work in the morning.  I also make a recipe and a half or double it while I have the kitchen messy so there are extra.  I freeze the extra pancakes, which is convenient for those busy mornings when trying to get everyone out the door on time. 

Pancake Recipe
2 cups of flour

4 teaspoons baking powder
1 teaspoon salt

2 tablespoons sugar

1 egg, well beaten
1 ¾ cup milk

1/3 cup of oil (healthy version olive oil)

*Secret ingredient: 1 tablespoon of vanilla.  It will make your pancakes extra yummy!!

Heat skillet or griddle while mixing batter.  When skillet or griddle is hot enough, drops of water sprinkled on it will bounce. 
Mix dry ingredients well.  Combine egg with milk and oil.  Add dry ingredients and stir until combined.  Batter will be lumpy.  For each pancake, pour about ¼ cup of batter into hot skillet or griddle.  Cook until pancakes become slightly golden and bubbles form on top, turn and brown other side.  Makes about 12 pancakes.

Top pancakes with your favorite syrup or in our house strawberry jam.   Enjoy!!
