Peach Picking and Cobbler

My children and I visited Joe Hubers Family Farm.  It was the perfect 80 degree day and blue skies all around.  We enjoyed our day of playing, tractor ride, visiting the animals and ice cream.  We also were able to pick fresh peaches and eat some along the way too.


Fresh Peach Cobbler
Crust Recipe
1 cup flour
4 tablespoons shortening
1/2 teaspoon salt
4 tablespoons water

This recipe is for one pie crust.  Mix flour and salt. Cut shortening into flour mixture.  *Tip-Pinch shortening and flour with your fingertips until it resembles crumbs.  Then add water and mix until stiff.  Roll out onto floured surface.
You will want to double this recipe for a top and bottom crust.

Cobbler Recipe
3 cups of fresh, sliced peaches
2 cups of sugar
1/4 cup brown sugar
1/2-3/4 teaspoon cinnamon

Mix fresh peaches with sugars and cinnamon until it thickens.  May add a couple pats of butter.  Pour peach mixture into pie crust and add top crust.  Remember to add air holes in crust, so it doesn't bubble up while baking.  Bake at 350 degrees for 40 minutes.
