Sparkling Peach Pie

Crust
1 cup of flour
1/2 teaspoon salt
4 tablespoons shortening
4 tablespoons water

Mix flour and salt.  Cut shortening into flour mixture.  Add water until stiff.  Roll out onto floured surface.

Peach Pie
1 unbaked pie shell
1 cup sugar
1 egg                                                                                          
 
1/3 cup butter
1/3 cup flour
1 teaspoon vanilla
Sliced peaches (enough to fill crust)

Cream butter, sugar, flour, egg and vanilla.  Pour over sliced peaches in shell. Add top crust. 
I like to sprinkle top of crust with sugar and cinnamon.
Bake at 325 degrees for an hour.
